Chorizo & Eggs

This was a really easy, ad hoc lunch that turned out exceptionally good. It uses the a handful of ingredients that you'll likely have around, like:

  • Chorizo sausage (Spanish, not Mexican)
  • Eggs (say 3 for 2 people)
  • Paprika (hot paprika if you like a slight kick)
  • Shallot (or spring onions)

Basically, just fry off the sliced sausage for a few minutes with the paprika in a little olive oil. Add the shallot and eggs and cook gently for a few minutes.

Yummy. Carbs? negligible but you know that sausage ain't health food, right? That's why I added the brown bread!
